Ingredients
200ml strong espresso coffee
200ml double thickened cream
2 tablespoons sugar
1 teaspoon vanilla
2 tablespoons of Marsala
Tablespoon of Marsala, extra
2 egg yolks, optional
200g gluten free biscotti amaretti biscuits
¼ cup sugar, extra
Grated organic chocolate
100g Quark cream cheese
6 strawberries
Method
1. In a shallow dish dissolve sugar in hot espresso coffee. Stir in Marsala and set aside to cool.
2. Mix egg yolks and sugar until pale and fluffy.
3. Whisk in quark cheese, double cream, vanilla and extra Marsala. 4. Mix well after each addition.
5. You will need six wine glasses of your choice to assemble the desserts.
6. Place a knob of the cream cheese mixture in the bottom of each glass.
7. (Per Serve) - Soak 4 biscuits at a time in the coffee mixture for approximately 30 seconds.
8. Each layer will have two biscuits topped with the cream cheese mixture.
9. Sprinkle with grated chocolate and top with a strawberry.
Place in the fridge for 2 – 3 hours before serving.
